Beneficio El Bajareque started operations in 2005, when we began buying coffee in cherry from producers in the Boquete region. From the beginning, our main objective has been to support coffee producers by offering purchase prices that exceed production costs.
In 2013, we opened our own benefit, located in Jaramillo Abajo. This benefit has been specifically designed for yeast fermentation, so its structure is unconventional. In addition, we use gas drying and have a system for treating waste water from the wet process.
We work with a group of more than 100 coffee producers in the area, with whom we have maintained relationships for over 20 years.
This lot processed on the same day as harvest to guarantee the quality of the cherries. The coffee cherries in tanks with a Coffee of yeasts and CO2 for 48 hours in an anaerobic system. The drying was carried out in African beds for 30 days and resting for 5 months.
